Kettle Sour Dubbel
Sometimes things go wrong, all too often in fact, inside a brewery. That never stops us though, as when equipment broke down, our brewmaster went to the store while it was being fixed. Adding yogurt and lactic to kettle sour the Dubbel in process. A day later the brewing resumed, with a long boil and our standard, but smaller Dubbel addition of Styrian Goldings hops. Along with the Belgian yeast strain and 2 great, even if not intentional, months of lagering, we get a version of the BOFT Dubbel that is faintly similar...while world's apart. Expect to taste an immediate lemon-citrus tartness, with very faint hints of banana-like sweetness and spicy phenolics. The citrus intensity, high residual sugars and modest alcohol content makes this perfectly paired with oysters and light seafood.
